Wholesome Cookies

Children have different needs to adults with their small stomachs and high energy expenditure. Vegan kids eating a Whole Food Plant Based diet need to supplement the usual fruits, vegetables, grains and pulses with more high energy foods like nuts, seeds, dried fruit and avocado. These lunchbox treats are a perfect school friendly treat to enrich their lunches. Filled with seeds, oats and dried fruit they are both highly nutritious and delicious. If for at home and your child can eat nuts then the seeds can be replaced with nuts like peanuts, walnuts or brazil nuts.

Ingredients - Wholesome Cookies

1/2 cup Pumpkin Seeds

1/2 cup Sunflower Seeds

(blend both to a fine crumb)

1/2 cup Date Paste (or blend pitted Dates to a smooth paste)

3/4 cup Rolled Oats

2 tablespoons Flax Seeds

1 tablespoons Molases

Method - Wholesome Cookies

Process all ingredients together until a dough forms. Can now add 1/4 cup chopped dark chocolate and/or dried currents.

Roll into balls and flatten with a fork onto baking tray.


Bake 10-15 minutes at 180C
