Sandwich Maker French Toast

Here is a twist on an old favourite sure to be a hit with the kids. These are made in a sandwich maker eliminating the need for added cooking oil. These are not so decadent perhaps as what you are used to - in that they are not dripping with grease with every mouthful, and I served them just with fresh banana and a wedge of lemon and a sprinkle of cinnamon. These are on plan in that they are free from added fats, oils and salt.

Ingredients - Sandwich Maker French Toast

3/4 cup of soy milk

1/2 cup pureed apple

1 teaspoon of vanilla essence

1 teaspoon cinnamon

2 teaspoons ground flax seed

2 teaspoons of brown rice flour

4 slices of wholemeal bread (or try a wholemeal fruit bread!)

Method - Sandwich Maker French Toast

Use a stick blender to blend up all ingredients except to the bread. Transfer the mixture into a shallow container large enough to dip the bread in. Dip the first piece of bread onto the mixture and ensure it is covered both sides. Place toast on heated sandwich maker, repeat with second piece (if you have sandwich maker that holds two pieces) close sandwich maker to allow cooking. Resist opening until it is ready or the toast will stick! Once cooked and carefully removed from the sandwich maker you put them together filled with sliced banana. Reheat and press together by placing back in the sandwich maker before slicing and serving. Serve with a wedge of lemon, s sprinkle of cinnamon and some slices of fresh banana.
